Cinco de Mayo - Plantain Chips


In celebration of Cinco de Mayo here is a quick treat that is great for any party, gathering, and just lounging around the house. 
 
Plantain Chips

What you'll need:
2 plantains, greenish-yellow oil for frying
salt to taste

Peel plantains and slice as thin as possible -less than 1/8 inch thick. Fry in hot oil until golden brown. Drain on paper towels. Salt to taste. Serve immediately.
